A great flat white is often decided before the milk reaches the cup. If the texture is stiff, bubbly or scalded, even a beautifully extracted espresso will taste flat. Learning how to steam milk microfoam gives you that glossy, sweet, paint-like milk needed for café-quality lattes, flat whites and latte art at home.

The goal is not simply hot milk with foam on top. Proper microfoam is milk with thousands of tiny, evenly distributed bubbles. It should look shiny rather than frothy, pour in one fluid stream and blend with espresso instead of sitting above it. The technique takes repetition, but a few reliable cues will improve your results quickly.

What microfoam should look and feel like

Microfoam has a wet, silky texture, similar to thin gloss paint. When you tilt the milk jug, the surface should move as one body of liquid, with a faint sheen and no visible large bubbles. For a latte, aim for a little more volume and a softer texture. For a flat white, introduce less air and keep the milk denser.

Dry foam is the common alternative. It forms when too much air is added or added for too long, creating obvious bubbles and a separated cap of froth. It can work for a traditional cappuccino, but it will make pouring rosettas, hearts and other latte art difficult.

Start with the right milk, jug and steam wand

Cold milk gives you more time to texture it correctly, so fill your jug straight from the fridge. Fresh full-cream dairy milk is generally the easiest place to start because its balance of protein and fat produces a sweet, stable foam. Reduced-fat milk can create more volume but may feel lighter and less creamy.

Plant-based milks vary considerably. Barista-style oat milk is usually the most forgiving, while soy can foam well but may split if overheated or poured into very acidic coffee. Almond milk often needs a gentler approach because it can become thin quickly. Whichever milk you choose, use one that is specifically formulated for coffee where possible.

Choose a stainless-steel milk jug that suits the drink size. A 400 ml or 600 ml jug is practical for one large drink or two smaller cups, while a 300 ml jug offers better control for a single flat white. Fill it to around the base of the spout, usually about one-third full. Overfilling leaves too little room for the milk to expand and makes positioning the steam wand harder.

Before steaming, purge the wand briefly into the drip tray. This clears condensation from the steam line so it does not dilute the milk. Wipe the wand immediately after every use, while residue is still soft.

How to steam milk microfoam step by step

The process has two distinct stages: stretching, where you introduce air, and rolling, where you break that air into fine microbubbles. Most problems come from rushing the first stage or skipping the second.

1. Set the jug and wand position. Place the steam wand tip just below the milk surface and slightly off-centre, around the 3 o'clock position if the jug spout faces 12 o'clock. Tilt the jug enough to encourage the milk to circulate around the wand.

2. Open the steam fully. Steam pressure is most stable when the valve is fully open. You should hear a gentle paper-tearing or soft kissing sound. A loud screech means the tip is too close to the surface, while no sound usually means it is buried too deeply.

3. Stretch the milk briefly. Keep the tip near the surface for the first few seconds to add air. For a flat white, this may be only two to four seconds. For a latte, continue a little longer. Watch for the milk level to rise rather than counting too rigidly, as different machines and milks behave differently.

4. Create a whirlpool. Lower the tip slightly once you have added enough air. The milk should spin in a controlled vortex, drawing larger bubbles into the liquid and refining the texture. This rolling phase is where smooth microfoam is made.

5. Stop at the right temperature. Aim for approximately 55 to 65°C. The outside of the jug should become too hot to hold comfortably for more than a moment. If you prefer precision, use a milk thermometer while you build your feel for the process. Avoid pushing past 70°C, as overheated milk loses sweetness and develops a cooked flavour.

Turn off the steam before removing the wand from the milk. Then wipe and purge the wand straight away. This small habit protects steam performance and avoids baked-on milk that is difficult to clean later.

Settle, polish and pour the milk

Freshly steamed milk needs a few seconds of finishing before it is ready to pour. Tap the jug lightly on the bench once or twice to pop any stray surface bubbles. Then swirl firmly in a circular motion. This blends the foam through the milk and restores the glossy finish.

Do not leave the jug sitting for long. Microfoam begins to separate as it rests, particularly with plant-based milks. If you are making more than one drink, pull the espresso shots first, steam the milk just before pouring, and divide the milk promptly between cups.

For a clean pour, start with the jug a little higher above the cup. This lets the milk travel beneath the crema and combine with the espresso. Once the cup is around halfway to two-thirds full, bring the jug close to the surface and increase the flow. The white microfoam will begin to appear on top, ready for a simple heart or tulip.

Fix the most common milk steaming problems

If your milk has large bubbles, you have introduced air for too long or held the wand tip too high. Start again with cold milk and keep the tip just beneath the surface. A few large bubbles can be reduced by tapping and swirling, but they cannot become true microfoam once the milk has been overheated.

If the milk is hot but flat, the tip was likely too deep during the stretching stage. Begin closer to the surface and listen for that soft, controlled aeration sound. Machines with lower steam power may need a little more time to add air, while powerful dual-boiler machines can texture milk very quickly.

If the milk is thick like shaving foam, too much air was added before the whirlpool developed. Shorten the stretching stage and move into the rolling phase sooner. For flat whites, less air is almost always the answer.

If you cannot create a whirlpool, adjust the angle before changing anything else. Keep the steam tip off-centre and tilt the jug slightly until the milk starts circulating. The correct position can feel surprisingly specific, especially with compact home machines, so use the reflection and movement of the milk as your guide.

Your machine makes a difference, but technique matters more

A commercial machine with strong steam pressure gives you speed and a wider margin for error. A quality home espresso machine can still produce excellent microfoam, though it may need more deliberate jug positioning and a little patience. Thermoblock machines often steam differently from heat-exchanger or dual-boiler machines, so allow time to learn the character of your own setup.

Steam wand design matters too. A single-hole tip can offer slower, more controlled steaming for beginners, while multi-hole tips texture larger volumes faster. Neither is automatically better. The best result comes from matching milk volume, steam power and technique.

Clean equipment is part of milk quality. A partially blocked steam tip can disrupt the whirlpool and reduce steam pressure, while old milk residue affects hygiene and performance. Regular cleaning and periodic servicing help your machine deliver consistent results for longer.

Microfoam rewards small adjustments rather than dramatic changes. Use cold milk, listen closely during stretching, watch for the whirlpool, and stop before the milk loses its sweetness. After a few sessions, your hands will recognise the right temperature and your eyes will spot that glossy finish before the first pour reaches the cup.
