The spices are blended with an organic, unrefined jaggery sugar (evaporated sugar cane juice) and a natural Sri Lankan tea extract. Their balance of spices ensures that the flavours are not too overpowering. It was the allure of the original fabled Spice Islands that first brought me to Sri Lanka, providing the inspiration for this evocative chai.
