Why Does Espresso Spray? Causes and Fixes
A sudden spray from the bottom of your portafilter can turn a carefully measured espresso into a messy bench, a wasted dose and a frustrating start to the morning. If you are asking, why does espresso spray, the short answer is usually uneven water flow through the coffee puck. The more useful answer is that the spray is a visible clue: your grinder setting, dose, distribution, tamp, basket or machine pressure needs attention.
A little dripping from a spouted portafilter is normal, particularly at the beginning and end of a shot. A naked or bottomless portafilter, however, makes every flaw in puck preparation easy to see. Fast jets, side sprays and a chaotic, spluttering extraction are not just cosmetic. They often signal channeling, which can leave the cup thin, sharp, bitter or both.
Why does espresso spray from a portafilter?
Espresso is made by forcing water through a compact bed of finely ground coffee. Ideally, the coffee is distributed evenly, the puck offers consistent resistance and water moves through it at a controlled rate. When one small area is less dense, cracked or poorly prepared, water takes that easier path under pressure. This is channeling.
Once a channel forms, it tends to worsen quickly. Water moving through the weak spot erodes coffee away, creating a narrow pathway that can release a jet from the underside of a bottomless basket. Meanwhile, other areas of the puck receive too little water and remain under-extracted. The result can be a shot that runs fast despite a fine-looking grind, with pale crema and an uneven flavour.

The most common causes of espresso spraying
Grind size is too coarse or inconsistent
A coarse espresso grind leaves larger gaps between particles, allowing water to rush through parts of the puck. If the shot reaches your target yield far too quickly, such as 36 grams out from 18 grams in within 15 to 20 seconds, the grind is a strong suspect. Move your grinder finer in small increments, then reassess the shot.
Consistency matters as much as fineness. A grinder producing an excessive mix of boulders and powdery fines makes even extraction difficult. Dull burrs, retained coffee, an unsuitable grinder or poorly aligned burrs can all contribute. Freshly cleaning the grinder and purging a small amount of coffee after an adjustment can make your next dial-in more reliable.
Uneven distribution before tamping
Even an excellent grinder cannot compensate for coffee that lands in the basket in clumps or piles up heavily on one side. Dense pockets and empty spaces create uneven resistance, inviting water to find the weakest route.
After grinding, distribute the dose before you tamp. A gentle shake or tap may level the grounds, but avoid aggressive knocking that can create layers or gaps in the puck. Many home baristas get more repeatable results with a needle-style distribution tool, particularly when using fresh coffee and a fine espresso grind. The aim is not to stir endlessly. It is to break up clumps and create an even density throughout the basket.
An uneven or inconsistent tamp
Tamping does not need heroic force. Once the coffee is properly compacted, adding more pressure offers little benefit. What matters is a level, repeatable tamp that leaves no obvious low edge for water to exploit.
Check your stance and keep the tamper flat against the basket. If the coffee bed is visibly sloped after tamping, water will favour the thinner side. A correctly sized tamper also helps. A tamper that is too narrow can leave a ring of loose coffee around the basket wall, where channeling often begins.
Incorrect dose or too much headspace
Every basket has a useful dose range. Underfilling it can leave excessive space between the puck and shower screen, allowing water to hit the coffee with more force and disturb the surface. Overfilling can cause the puck to press into the shower screen, restrict flow and create cracks when the portafilter is removed.
Start with the basket manufacturer’s recommended dose range, then adjust based on the coffee and your target recipe. After a shot, inspect the puck without over-interpreting it. A wet puck alone is not proof of a problem, but a deep screen imprint, fractured surface or obvious hole can point to dosing or preparation issues.
Stale coffee or uneven particle behaviour
Coffee changes quickly after roasting. Very fresh beans can release a great deal of carbon dioxide, making extraction lively and sometimes difficult to control. Older coffee may run quickly and struggle to build resistance. Neither situation automatically causes spraying, but both can make channeling more likely if the grinder setting and dose are not adjusted.
For espresso, coffee is often easiest to dial in after a short resting period, though the ideal window depends on the roast and packaging. Store beans in an airtight container away from heat and light, and grind immediately before brewing. Pre-ground coffee rarely delivers the consistency needed for clean, high-quality espresso.
Basket, shower screen or portafilter issues
Do not overlook the hardware. A blocked or partially blocked basket can force water through only a few open holes, producing uneven flow. Coffee oils and fine particles can also build up behind the shower screen, disrupting water distribution before it reaches the puck.
Remove and clean the basket regularly, especially if you make milk drinks throughout the day and wipe down equipment quickly between shots. Backflushing a compatible machine with the correct cleaning product, and periodically removing the shower screen for a proper clean, supports both flavour and extraction consistency.
A damaged basket, warped portafilter or worn group seal may also cause leaks that look like spraying. If water is escaping from the rim where the portafilter locks into the group head, rather than jetting from the coffee basket, stop focusing on puck preparation. The seal, basket rim or portafilter fit may need inspection.
Pressure that is too high
Many modern espresso machines are designed to brew near 9 bar of pressure at the coffee puck. If pressure is significantly higher, it can exaggerate weaknesses in preparation and increase the chance of channeling. Some domestic machines display pressure in a way that can be confusing, so a gauge reading alone is not always definitive.
If your shots consistently spray despite a careful workflow, correct grind and fresh coffee, machine pressure is worth checking. This is particularly relevant after a repair, modification or long period without servicing. A qualified technician can assess pump pressure, the over-pressure valve and water flow, rather than having you chase the issue with endless grinder adjustments.
A practical way to stop espresso spraying
Change one variable at a time. Start by weighing both your dry dose and liquid yield. A dependable baseline for many traditional espresso recipes is a 1:2 ratio, such as 18 grams of ground coffee producing 36 grams of espresso, often in roughly 25 to 32 seconds. It is a starting point, not a rule. Lighter roasts may suit a longer ratio, while some darker coffees taste better slightly shorter.
If the shot sprays and runs too quickly, grind finer first. If the timing is close but spraying remains, focus on distribution and tamping. Use the same dose, level the grounds carefully and tamp once with a flat, controlled motion. Check that your basket suits the dose and that the portafilter is clean and dry before dosing.
A bottomless portafilter can help you see whether the changes are working. A well-prepared puck will usually show droplets forming evenly across the basket before they join into a centred stream. It may not look perfectly symmetrical every time, and it does not have to. Taste remains the final judge. Chasing a picture-perfect extraction while ignoring a sweet, balanced cup is not a worthwhile trade-off.
When spraying points to a service issue
Some symptoms sit outside normal dial-in. Water leaking around the group head, erratic pump noise, a sudden loss of pressure, blocked flow without coffee in the basket or inconsistent temperatures can indicate a machine problem rather than a barista problem. Scale, worn seals, a tired pump or a blocked solenoid can all affect extraction.
Regular cleaning, filtered water and timely servicing protect premium equipment and reduce those avoidable faults.
